High protein chicken recipes to delight the taste buds
You will never be stuck for ideas to create an interesting chicken meal, as there’s nothing like the versatility of chicken.
But rather than the usual chicken burgers or chicken with potatoes and vegetables, why not try a new recipe that is quick and easy to prepare for dinner during a busy week for the family or as part of a low fat, calorie controlled diet if you’re maintaining your health and fitness?
One recipe we would highly recommend is chicken and lemon kebabs. This recipe is essentially chicken skewers on flatbread and is high in protein (41g) but low in fat (4g).
Here are the steps:
1. Chop half a small pack of mint and add to a bowl with 150g of natural yogurt, half a juiced lemon, cumin, coriander and a small piece of grated ginger. Mix and season with salt and black pepper. Add 4 boneless chicken thighs , cut into 6 pieces, mix together and place into the fridge for 20 minutes. Use metal skewers later on to add the chicken.
2. Heat the grill to a medium heat and line your tray with foil to cook the chicken. Thread the chicken onto the skewers and grill for 15 to 20 minutes, turning halfway until the chicken is cooked.
3. Warm flatbreads under the grill for a few seconds, then serve the chicken on top of the flatbreads with extra lettuce, red onion, lemon juice and mint, as well as extras for taste such as yogurt, cabbage, chilli sauce or hummus.
