Place two teaspoons of yoghurt, a squeeze of lemon juice, two cloves of garlic, a teaspoon of crushed ginger, 1 chopped and de-seeded green chilli and some coriander into a blender or food processor until smooth. Tip into a bowl and add 400g of marinated chicken breasts that have been cut into bite sized pieces. Place the chicken between 4 metal skewers, leaving gaps so they get well charred.
Heat the grill to high. Put the skewers onto a foil lined baking sheet and grill for 4-5 minutes, turning to ensure the chicken is completely cooked through and charred.
Mix half a sliced onion and a handful of sliced cherry tomatoes with some seasoning and a squeeze of lemon.
Mix coriander leaves into 2 tablespoons of yoghurt in a bowl with some lemon juice, with seasoning of your choice and a teaspoon of water.
Boil rice separately, divide and add onto the top of 4 roti’s. Add the onion, tomatoes and marinated chicken on top, finishing off with the coriander yoghurt. Wrap and serve for a healthy and delicious meal.
